Easy Mexican Recipes

Mexican recipes have a bad reputation of being fattening. In reality, Mexican recipes are much healthier than most American dishes. Americans are the ones who increased the fat content by adding oodles of cheese and sour cream.  You can make Mexican recipes healthier by adding fresh tomatoes, lean meat, green peppers, and chiles like the authentic dishes in Mexico.  For example, use ground chuck instead of beef in the recipes below. Fry the tortillas in vegetable oil rather than lard. Here are some easy Mexican recipes to try for parties, dinner parties, and get-togethers.

Flour Tortillas

4 cups All purpose flour

1 1/2 teaspoons Salt

1 1/2 teaspoons Baking powder

4 tablespoons Lard or shortening

1 1/2 cups Warm Water

Combine dry ingredients in a mixing bowl. Cut in shortening. Make a well in the center and add water, a small amount at a time, to form a dough. Knead dough in bowl until smooth and elastic. Cover and wet aside for ten minutes.

Form dough into egg-sized balls and flatter between palms. With rolling pin, roll each ball into a 6 inch circle, about 1/8 inch thick. Cook on preheated ungreased skillet over medium high heat, apprx. two min. per side, until tortilla looks slightly speckled. Cover with a clean towel to keep warm and soft until served. The tortillas may be cooled and stored in plastic bags in the freezer for later use.

Taco Pie

1 package Crescent rolls

1 package Taco mix

2 cups Corn chips—crushed

1 cup Cheddar—shredded

1 pound Hamburger

1/2 cup Water

1 cup Sour cream

Cook hamburger, taco mix and water according to package directions. Place unrolled crescent dough in ungreased pie plate to form crust.

Sprinkle with half of the corn chips and top with hamburger mixture. Spread sour cream on top and cover with cheese and remaining chips. Bake at 375 degrees for 20 minutes or until heated through.

MEXICAN MEAL

1 medium bag taco chips, crushed

1 lb. hamburger

1 medium onion, chopped

1 can cheddar cheese soup

1/2 can milk

1 pkg. taco seasoning

1/2 head lettuce, chopped

2 tomatoes, chopped

1 - 8 oz. pkg. each of shredded mozarella and cheddar cheese.

Crush taco chips in a greased 9x13 pan. Brown hamburger and onion, draining if necessary. Mix soup, milk and seasonings and heat. Mix with meat and onion mixture. Spoon over crushed taco chips. Sprinkle lettuce and tomatoes on top of mixture. Top with cheeses and bake at 350 degrees for 1/2 hour, or until completely warm.
