Fried for just under a minute in hot oil as in this recipe results in tender, crispy rings of calamari. Use your favorite dipping sauce to serve, although I like to use a simple tomato sauce spiced up with a pinch of red pepper flakes.

The fried chicken is radically different, reflecting an Asian frying technique that renders out the fat in the skin, transforming it into a thin, crackly and almost transparent crust. The chicken is unseasoned, barely dredged in very fine flour and then dipped into a thin batter before going into the fryer. The oil temperature is a relatively low 350 degrees, and the chicken is cooked in two separate stages.

All you need to do is arrange the pork in a single layer in the base of a lidded flameproof casserole with a capacity of 4 pints, then simply mix all the other ingredients together, give them a good whisk and pour over the pork. Now tuck in everything up to a very gentle simmer. Put the lid on and simmer over the gentlest possible heat for 45 minutes. At that point turn the pieces of pork over, replace the lid and simmer for 45 minutes more.
